PAMIDOROV DZVADZEGH (Tomato Omlette)

Ingredients

2 tomatoes

2 eggs

1/2 sweet pepper (any color)

1/4th onion

1-2 garlic cloves

a few sprigs parsley

salt=pepper to taste

15g (1tbsp) butter

Directions

Remove the skin from the tomatoes. Make an x cut on the bottom of the tomatoes, place in a small bowl and add boiling water on them. After a few minutes you can easily peel the skin off. Chop them into small cubes. Chop the onion, chop the pepper, and mince the garlic. Place a small pan on medium heat and add butter. Add onion + garlic, and salt + pepper. Add chopped pepper. Once pepper is cooked and soft, add the tomatoes. Cook until the tomatoes start falling apart and start looking like sauce. Beat eggs in a bowl and add them to the pan. Mix well, cook for a few minutes and remove from heat. Taste, and add salt + pepper as needed. Garnish with parsley and serve with buttered toast.
